A nice pasta recipe

Anjali loved it, and so did husband. There was a grand total of one pasta piece for me, so i cant comment.

The day before, put four tomatoes in boiling water, scald them, remove the skin, chop and keep in the fridge (this can be done just bafor making also, but I am lazy in the morning)

Boil water, add salt, a bit of oil and pasta, cook till al dente, drain and keep aside.

In a pan, fry onion and garlic until soft, add seasoning (salt, pepper, one teaspoon of sugar, a lot of herbs - I use oregano, thyme, a dash of cinnamon, a nice chunk of parsley, all dried), bring to boil, simmer, cover and cook for about 20 minutes.

After that, if the sauce it too liquidish, then remove the cover and continue boiling until thick.

when sauce is ready, put the pasta in. For fun, I added some chopped fresh ajwain leaves (the only herb that is growing nicely in my balcony)

Delicious.

  1. yummy, i love this but you dont need to blanch the tomatoes - too much work :D just grind them in the mixer that will do actually. To thicken the mixture quickly as I am impatient - I just add in some rice flour or wheat flour ;)

  2. You got to wash the mixer :P And Sophia ALWAYS wakes up when she hears the sound of the mixer. Actually you can just chop them without peeling if you are not too particular about the skin, its still taste alright
